Start with chilled raw poultry. If frozen, thaw it overnight in the fridge in a tray or container (like a roasting pan), preferably with a lid.
If necessary, remove the skin from the poultry.
Refer to the list below to decide whether direct or indirect grilling is best for your chicken cuts.
If using a charcoal grill, place the poultry on the grill with the bone side up (if bone-in) directly over medium heat. (Here’s how to control your charcoal grill temperature.) Cover the grill, cooking for the recommended time or until it reaches the proper internal temperature. Flip the meat halfway through.
If using a gas grill, preheat it, then adjust the heat to medium. Place the chicken on the grill with the bone side down (if bone-in) over medium heat. Cover the grill and follow the grilling times in the chicken grilling instructions below.
Use a meat thermometer to check for doneness. For the most accurate and quick results, we recommend an instant-read thermometer. The temperature should range from 165°F to 175°F, depending on the type of chicken. During the last 5 to 10 minutes of grilling, brush on some sauce.
Once done, remove the chicken from the grill and cover it with aluminum foil. Let it rest for about 5 minutes to redistribute the juices.
